Kerrygold Irish Mac & Cheese

  • 1 lb macaroni, cooked
  • 4 T Kerrygold butter
  • 3/4 cup onion, diced
  • 4 T flour
  • 3 cups milk
  • 1 c cream
  • 1 bay leaf, pinch salt & pepper
  • 3 cups Oscar Wilde Cheddar
  • 1 c breadcrumbs…

Cook onion, flour, milk, cream and macaroni for 25 min on medium stovetop, then pour in casserole, top with cheese & breadcrumbs. Bake at 375 for 10 minutes.

  • Shamrock Shake:
  • 2½ cups milk (dairy or non dairy)
  • 1 cup spinach
  • 1 banana
  • ½ avocado
  • 8 mint leaves / a drop of mint extract
  • optional: honey or maple syrup
  • Toppings:
  • whipped cream or whipped coconut cream
  • 25g dark chocolate and 1tsp coconut oil
  • cacao
  • mint leaves
Instructions
  1. Place the milk, spinach, banana, avocado and mint leaves / mint extract in a blender and blitz until smooth. Taste your shake and add honey or maple syrup if you prefer it to be sweeter.
  2. Add any topping you like. You can make a chocolate sauce by melting the coconut oil and dark chocolate together in a saucepan / microwave.

Irish Steel-Cut Oats Granola

  • 3 cups steel-cut oats (gluten-free if necessary)
  • 2 cups of mixed nuts & berries (almonds, pumpkin seeds, dried cranberries )
  • 1/2 tsp cinnamon + 1 DROP CINNAMON OIL
  • 1/4 tsp sea salt
  • 1/4 cup coconut oil, melted
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey
  • 1/2 cup raisins
  • 1 tsp vanilla extract
  1. Preheat oven to 300 degrees F.
  2. In a large bowl combine steel-cut oats, nuts, cinnamon and sea salt.
  3. In a separate bowl combine coconut oil, applesauce and honey.
  4. Stir wet ingredients into dry and mix until combined.
  5. Spread granola over a parchment or silicone-lined baking sheet.
  6. Bake for 20 mins.
  7. Remove from oven and flip and the bake for another 20 mins.
  8. Remove from oven once again, flip and then bake for another 15 mins.
  9. Remove from oven and flatten granola with the back of a spatula.
  10. LET SIT FOR ONE HOUR. Do not try to move granola off tray.
  11. After an hour, you can take the granola and break it up into clusters.
  12. Combine with raisins.
  13. Keep in an airtight container for up to 2 weeks
